My other New Year’s resolution this year was to stop buying food at Starbucks. It’s expensive, it’s not tasty and rumour has it that most of it is shipped frozen to the individual stores from some big bakery somewhere. But since my family morning routine often doesn’t permit me to eat at home before I drop the kids off at school, picking up breakfast along with my coffee had become a bad habit.

Over the holidays, I had tried the Quick Date-Apple-Cinnamon Oatmeal recipe from The Kind Diet by Alicia Silverstone (Rodale Books) and inspired by that recipe, I’ve got a variation now (Apple-Fig-Walnut) that I can whip up when I get to the office, no cooking required. All the ingredients can be stored in our little office kitchen so I have no more excuses to eat a bad breakfast. Here’s how it works:

Bring a kettle of water to boil. In the meantime, place half an apple, cubed, a few tablespoons of chopped walnuts, three dried figs, chopped, and one cup of quick-cooking oatmeal in a bowl. Pour just enough boiling water over them to cover. Place a plate over the bowl and let stand until water is absorbed. Drizzle with maple syrup, take back to your desk and enjoy starting the morning off right.

    I have the exact same breakfast every morning: Bran Buds with a sprinkle of On Track on top (I like the one with the dried strawberries) and a splash of soy milk. Oh, and coffee. :)

    But this looks AMAZING. I have to try it.
