
The other night I was feeling nostalgic about the summer ending. We also had a few kids over who had just returned from a family trip to California (lucky ducks) so I was inspired to serve something beachy even as we sat inside our air-conditioned kitchen staying away from the summer heat wave that had knocked us out all day!
Fish tacos were a big hit, as usual. After some initial grumblings that sounded something like ‘fish instead of meat or chicken’? And ‘we’ve never had fish tacos before’ (from the friends), I placed the toppings out on the table and everyone gave it a go.
Unfortunately I didn’t have a fresh mango at home for the salsa but I did find some salsa in a jar with mango in it. I also chopped up some fresh peaches and chopped them up with an avocado as a topping (so delicious). The kids piled all their faves on top (at first reluctant to include peaches but eventually gave in) and it was a big hit.
You should really give fish (tacos) a try. It’s a great way to get your kids excited about eating fish the fun way.
