Baked Pasta with Chicken and Ricotta

Baked Pasta with Chicken and Ricotta

Serves 3

You'll Need
  • 250 g (½ lb) kid-friendly spiral pasta (Scooby by Unico is our kids’ fave)
  • 1 cup cooked chicken, chopped
  • 1 cup chopped fresh or frozen spinach, thawed and drained (or the favourite vegetable of the month, such as carrots, peas, or broccoli)
  • 1 cup 2% milk
  • 1 cup ricotta cheese
  • Salt and pepper
  • ¼ cup parmesan, grated
Prep and Cook
  • Preheat oven to 400 degrees.
  • Cook pasta al dente (not fully cooked) in pot of boiling water.
  • Drain pasta and return to pot.
  • Add chicken, spinach, milk, and ricotta. Season with salt and pepper.
  • Pour noodles into baking dish and top with Parmesan cheese. Bake for 20–30 minutes or until golden brown.

Good to Know: prepare pasta in ramekin dishes for individual servings that kids love.

 

Chocolate Mud Pies

Makes 24 cookies

You'll Need
  • 2 cups white sugar
  • ½ cup cocoa
  • ½ cup milk
  • ½ cup butter
  • 3 cups rolled oats (large flakes)
  • 1 cup coconut
  • 1 tsp vanilla
  • Red and green candied fruit, holiday smarties, candy cane pieces (optional)
Prep and Cook
  • Combine sugar, cocoa, milk and butter in a heavy-bottomed saucepan. Cook over medium heat, stirring constantly.
  • Remove pot from heat and add remaining ingredients.
  • Drop by teaspoonful onto waxed paper lined baking sheets. Choose and place festive decoration on top of cookies while still soft.
  • Chill at least two hours.

Good to Know: These cookies are easy enough for the kids to make! Make them together in half an hour for the perfect cooking activity. They are nut free and ideal for school if someone needs a treat for the class party.
