Fish Quesadillas

Fish Quesadillas

Makes 2 quesadillas

You'll Need
  • 2 small whole wheat flour tortillas
  • ¾ cup cooked fish chunks
  • 2 Tbsp salsa
  • ½ cup mozzarella cheese, grated
  • 1 tsp grapeseed oil
Prep and Cook
  • Place tortillas on dinner plates and sprinkle cheese evenly over each tortilla.
  • Spoon salsa and fish onto each half of the tortilla.
  • Fold tortillas over and press down until sealed.
  • Heat frying pan over medium heat.
  • Brush pan lightly with grapeseed oil.
  • Place one or both quesadillas in the pan and grill for about 2 min per side or until cheese is melted and tortillas are lightly browned.
  • Cut into wedges.

Good to know: The cheese is an important ingredient in this recipe, because it keeps the flat tortilla shells together. Be generous with it.

Fun Factor: Serve with a dollop of salsa or sour cream for dipping. Kids love to feel like they have some choice.

Lemon Roasted Potatoes

Serves 4–6

You'll Need
  • 6 new white or red potatoes (about 1 kg)
  • 2 Tbsp olive oil
  • Juice from one lemon
  • Salt and pepper
Prep and Cook
  • Preheat oven to 400 degrees.
  • Wash potatoes and cut into quarters.
  • Place potatoes in large bowl and toss with olive oil, lemon juice, salt and pepper.
  • Arrange potatoes on rimmed baking sheet or in glass pyrex dish.
  • Bake for 40 minutes, turning potatoes twice during cooking time to prevent sticking.
