Fruity Spinach Salad

Serves 4–6

You'll Need
  • 8 cups fresh baby spinach
  • 1 pint strawberries, sliced
  • 1 grapefruit cut into thin segments
  • 1 red or orange pepper, thinly sliced
  • ¼ cup pine nuts or almonds, toasted

Poppy Seed Dressing

  • 1 garlic clove, minced
  • 1 cup plain yogurt (whole or low fat)
  • 2 Tbsp freshly squeezed lemon juice
  • 1 tsp poppy seeds
  • 1 Tbsp liquid honey
Prep and Cook
  • In a small bowl, whisk together ingredients for the dressing until smooth.
  • In a large salad bowl, combine spinach leaves, strawberries, grapefruit and peppers.
  • Drizzle dressing over the salad, a little at a time, and toss to coat.
  • Sprinkle the salad with toasted nuts and serve immediately with a side of honey garlic wings.

Good to know: For optimal flavour, fresh spinach should be eaten immediately. However, it can be stored in the refrigerator for up to three days. Most bagged spinach comes pre-washed, but extra washing is highly recommended. Submerge the leaves in water and let them sit for a few minutes to remove any leftover sand.

Making Salad More Fun

Try and incorporate salad into family meals by creating one for the kids with more “fun” ingredients (fruit, nuts, favourite veggies) that they like. As time goes on, more greens can be added to their portions.
