Grilled Cherry Tomato Pizza

Serves 2 toddlers

You'll Need
  • 1 flatbread (any shape)
  • ¼ cup roasted tomato sauce
  • 6 cherry or teardrop tomatoes, halved
  • 2–3 small bocconcini cheese balls, sliced
  • ½ cup mozzarella cheese, shredded
Prep and Cook
  • Preheat grill to medium-high heat.
  • Place flatbread on the grill rack and cook for 1–2 minutes on the bottom side.
  • Remove bread from the grill and spread the top side with tomato sauce.
  • Arrange tomatoes and bocconcini slices on the crust.
  • Sprinkle evenly with shredded cheese and return to the grill until cheese is bubbly and tomatoes are soft.
  • Remove pizza from the grill with a spatula, place on cutting board and then let it rest for a few minutes before slicing.

Good to know: Add any other favourite pizza toppings to your grilled pizza, including cooked chopped chicken or turkey, vegetables or fresh herbs. Buy a couple bags of flatbreads or pitas to freeze and then you’ll have them on hand for quick-and-easy pizzas. To save time, purchase good store bought tomato or pesto sauce instead of making your own.
