Family Meal

Grilled Sausage on a Bun

Grilled Sausage Dog

Serves 4–6

You'll Need
  • 6 sausages (any flavour will do, but we like spicy Italian and turkey)
  • 6 sausage buns (crusty, whole grain, Ciabatta), warmed
  • Variety of relishes (tomato, onion, dill, corn)
  • Variety of mustards (Dijon, honey, yellow)
  • Grilled onion slices (optional)
  • Ketchup/BBQ sauce
Prep and Cook
  • Preheat grill to 375 degrees.
  • Place the sausages directly on the grate and grill over a medium fire, turning occasionally, until cooked through or until golden brown, 10 to 15 minutes.
  • Do not prick or slash the skin during cooking, as this causes the juices to escape.
  • Place the sausages in the buns, top with generous spoonfuls of relish, mustard, grilled onions, and ketchup.

Good to Know: Sausages come in all kinds of varieties and flavours—be sure to expand your repertoire and try some new ones. Your local butcher shop might offer a few more varieties.

Mixed Green Veggie Salad

with Creamy Dill Dressing
Serves 4–6

You'll Need
  • 2 cups baby spinach
  • 2 cups mixed greens
  • 1 cup green beans
  • ½ head broccoli
  • 1 cup sugar snap peas
  • 1 cup seedless green grapes

Dressing

  • ¼ cup plain yogurt
  • ¼ cup light mayonnaise
  • ½ cup dill, chopped
  • Juice of ½ lemon
  • 1 Tbsp honey
  • Salt and pepper to taste
Prep and Cook
  • Wash, trim ends, and cut green beans in half.
  • Remove stalks, cut broccoli into florets, and wash well.
  • Blanch green beans, broccoli, and peas for 1–2 minutes.
  • Drain and rinse under cold water to stop them from cooking.
  • Combine spinach, mixed greens, grapes and blanched green vegetables in a large bowl.
  • In small bowl, mix together yogurt, mayonnaise, dill, lemon, honey and salt and pepper. (If yogurt is very thick, you might need to add water to thin it out.)
  • Pour over salad and toss gently.

Kids-Made-the-Lemonade

Makes 1 Pitcher

You'll Need
  • 1 can (355 ml) lemonade concentrate (we prefer the no name brand because it has that old fashioned tart flavour)
  • 1 lemon, sliced
  • Ice
Prep and Cook
  • Soften concentrate and add to pitcher with cold water according to package instructions.
  • Add a few slices of lemon to the pitcher.
  • Serve over ice with a slice of fresh lemon.

Father’s Day Ice Cream Cake

Serves 8

You'll Need
  • 2 L mint chocolate chip ice cream, slightly softened
  • 1 ½ cups Oreo cookie crumbs
  • 4 Tbsp unsalted butter, melted
  • 1 small tube of chocolate icing
  • 1 popsicle stick
  • 1 piece of coloured construction paper
  • glue
Prep and Cook
  • Pour cookie crumbs into a mixing bowl.
  • Add the melted butter and stir the mixture until the crumbs are evenly moistened with butter.
  • Transfer the crumbs to an 8-inch spring form pan or pie dish.
  • Using your fingers, press the crumbs evenly over the bottom of the pan and freeze for 15 minutes.
  • Alternatively, omit steps 1 – 4 above by using an Oreo pie crust bought from the supermarket.
  • Spoon the (slightly) softened ice cream on top of the crumb crust, pressing it down firmly with a spatula.
  • Cover with aluminum foil and freeze at least three hours or overnight.
  • If using a spring form pan, run knife around the inside edge of pan and release collar from the pan.
  • Using a tube of icing with tip, decorate the top of the Father’s Day golf-themed cake by writing Dad a special message i.e. #1 Dad.
  • Have kids make a flag for the hole, using a popsicle stick for the post and construction paper for a flag.

Good to know: If sticking with the golf theme, try to find a mint chip ice cream that is darker green in colour. 

Strawbana Kebobs

Serves 6

You'll Need
  • Strawberries, halved
  • Bananas, sliced
  • Bamboo skewers
Prep and Cook
  • Arrange the prepared fruit in small separate bowls.
  • Have the kids feed the fruit onto the bamboo skewers, starting at one end and filling the skewer to the other end, making a pattern as they go.
  • Serve the completed fruit kebobs on an oval platter.

Good to Know: Bananas will go brown if made ahead of time so kids might want to make this while adults are finishing up the meal.
