Homemade Peppermint Marshmallows

Peppermint Marshmallows

Makes 40 one-inch marshmallows

You'll Need
  • 3 – ¼ oz envelope of gelatin
  • ½ cup cold water
  • 2 cups granulated sugar
  • ⅔ cups light corn syrup
  • ¼ cup water
  • ¼ tsp fine salt
  • 1 tsp vanilla extract
Prep and Cook
  1. In the bowl of an electric mixer, sprinkle the gelatin over ½ cup cold water. Soak for 10 minutes.
  2. Meanwhile, combine the sugar, corn syrup and remaining ¼ cup of water in a small saucepan. Bring to a boil and boil hard for 1 minute.
  3. Pour the boiling syrup into the gelatin mixture and mix at high speed. Add the salt and beat for 10 to 12 minutes.
  4. Add the vanilla and incorporate it into the mixture.
  5. Lightly oil a spatula and scrape the mixture into a 9” x 9” baking pan, sprayed with a non-stick spray or well-greased with vegetable oil.
  6. Let the marshmallows set for a minimum of 2 hours.

    My girls and I loved doing this recipe!  It turned our really well.  We used Kool-aid to flavour and add colour and the Kitchen Aid mixer which made it super easy.
