Mini Pizzas

Mini Pizzas

Serves one toddler
(with lots of extra sauce)

You'll Need
  • 1 small pita bread or english muffin, sliced in half
  • ¾ cup canned plain tomato sauce
  • ½ cup corn kernels
  • ½ cup shredded zucchini, yellow or green
  • ½ cup shredded carrots
  • ½ cup finely diced tomato
  • ½ cup mozzarella cheese, shredded
  • Additional vegetables/meats of choice
Prep and Cook
  • In medium sized bowl, combine tomato sauce, corn, zucchini, carrots, and chopped tomato.
  • Spread sauce on pita or muffin bread.
  • Sprinkle shredded cheese and top with any additional ingredients (diced ham, pineapple).
  • Bake at 350°F degrees in oven until cheese is melted.
  • Remove from oven, cool and cut into mini pizza slices.

Good to know: Make lots of veggie sauce and store for future use in fridge or freezer. It is great with pasta, in casseroles, and meatballs.

Warm Baked Apples

Serves 6

You'll Need
  • 6 large red baking apples (Rome Beauty, Golden Delicious, Cortland)
  • ¾ cup brown sugar
  • ¼ cup butter
  • 1 Tbsp cinnamon
  • ½ Tbsp nutmeg
  • ¾ cup boiling water
Prep and Cook
  • Preheat the oven to 375°F degrees.
  • Using an apple corer or paring knife, remove cores to ½ inch from bottom of the apple. Scoop out the seeds with a spoon. Holes should be approximately 1 inch wide.
  • In a small mixing bowl, blend together the brown sugar, butter, cinnamon, and nutmeg together.
  • Place apples in a shallow baking pan. Spoon the sugar mixture into the holes of the apples. Add boiling water to the bottom of the baking pan.
  • Bake for 30 – 40 minutes or until apples are tender, but not mushy.
  • Scoop apple from skin, mash with fork and serve with ice cream.
