Father’s Day Ice Cream Cake

You'll Need
  • 2 L mint chocolate chip ice cream, slightly softened
  • 1 ½ cups Oreo cookie crumbs
  • 4 Tbsp unsalted butter, melted
  • 1 small tube of chocolate icing
  • 1 popsicle stick
  • 1 piece of coloured construction paper
  • glue
Preparation
  • Pour cookie crumbs into a mixing bowl.
  • Add the melted butter and stir the mixture until the crumbs are evenly moistened with butter.
  • Transfer the crumbs to an 8-inch spring form pan or pie dish.
  • Using your fingers, press the crumbs evenly over the bottom of the pan and freeze for 15 minutes.
  • Alternatively, omit steps 1 – 4 above by using an Oreo pie crust bought from the supermarket.
  • Spoon the (slightly) softened ice cream on top of the crumb crust, pressing it down firmly with a spatula.
  • Cover with aluminum foil and freeze at least three hours or overnight.
  • If using a spring form pan, run knife around the inside edge of pan and release collar from the pan.
  • Using a tube of icing with tip, decorate the top of the Father’s Day golf-themed cake by writing Dad a special message i.e. #1 Dad.
  • Have kids make a flag for the hole, using a popsicle stick for the post and construction paper for a flag.

Good to know: If sticking with the golf theme, try to find a mint chip ice cream that is darker green in colour.
