Strawberries

Freezing Strawberries

Pick your own strawberries, rinse well and remove stems. Avoid berries sticking together when frozen by spreading them out on cookie sheets first to freeze. Once frozen, remove from tray and store in Ziploc® bags for smoothies, muffins, or summer cocktails (even if it’s February).

Gear

Remember to pack the always essential bug spray, sunscreen and hats. For seating, grass mats (from the dollar store) and simple picnic blankets are easy to pack but if you have a folding “soccer” chair, you might be more comfortable. Soft coolers are easier to transport and recommended for a hot day so the food will keep but a handy Reisenthal basket will work if you are taking a short trip (so the food doesn’t spoil).

Glam Factor

The phyllo pastry shells are a beautiful way to present this dinner and provide serious wow factor with little effort. Don’t be afraid to use phyllo pastry—it comes frozen and is simple to use if you follow the directions. We recommend making the cups the day before but be sure to keep them in the muffin tin so they won’t break when being stored. Use an extra large muffin tin (with six to a pan).

Picnic Packing

Don’t forget a bag for garbage, a sharp knife, wipes and bottles of water. We like recyclable paper plates, napkins and bowls for serving and we try to use washable utensils to avoid creating unnecessary waste.
