We live in angst. Eat healthy, think healthy and be a shining example to our kids. Then there’s chocolate.
Luckily at this Easter-time of year, we found the perfect way to feed our appetite for both with this simple and delicious recipe courtesy of Rising Chefs, the great new children’s culinary centre in TO. It is quite literally the best chocolate brownie recipe we have tested…ever.
Ingredients:
2 cups whole wheat flour
½ cup cocoa powder
1 ½ tsps baking soda
1 tsp salt
½ cup canola oil
½ cup apple sauce
1 cup sugar
½ cup brown sugar
2 tsp vanilla
2 cups finely shredded zucchini
¼ cup dark chocolate chips
Directions:
Preheat oven to 350
Grease and flour 1 9x13 baking pan
In a medium sized bowl combine flour, cocoa, baking soda and salt
In a large bowl mix both sugars, oil, apple sauce and vanilla until well blended
Add flour mixture to wet ingredients and stir until just combined
Fold in zucchini and chocolate chips
Spread evenly into pan
Bake for 35–40 minutes or until brownies spring back in centre when touched.
That’s right. The ingredients include zucchini and applesauce. Chef Tracey Manne (savvymom and veteran of the Four Seasons kitchen in Yorkville), owner and founder of Rising Chefs and chef Clive Lawrence are committed to introducing children and families to the wonderful world of healthy food and cooking in a safe and delicious way. They cater to children from three years and up but offer other great services worth checking out too.
We think the Rising Chefs Club is a great gift idea for any young Jamie Oliver you know. Children sign up to receive a package once a month with a new recipe to try out and the corresponding ingredients to make it. Adult classes like ‘Guy’s Night’ and ‘Host with the Most’ will be popular, we’re sure, as well as the ‘Supper’s Ready’ where you can assemble and bring home your prepared meals for later. Keep it in mind for Jack or Jill’s next birthday bash. (We’re pretty sure the cake will be up to our savvy standards.)
But before you do anything, make the brownies. And enjoy the long holiday weekend with your family.
