Maple Syrup Taffy

Maple Syrup TaffyWhat you need:
1 cup pure maple syrup
snow (or make your own using crushed ice)
a medium-sized pot
a large cake pan
a candy thermometer
4 popsicle sticks

  1. Pack snow into the cake pan. Leave it outside if it’s cold enough, if not, put it in your freezer while you do the next step.
  2. Boil the maple syrup until it reaches 110–127ºC on a candy thermometer. You’ll know it’s ready if it forms a thread when you drop a bit into some cold water. This should take about 10 minutes.
  3. When the syrup is ready, drizzle it across the snow in short rows. Roll up onto the ends of popsicle sticks to make a lollipop. Don’t wait too long, otherwise it’ll be too cold to roll. If this happens, just eat it with a spoon. It’ll taste just as good!
