SavvyMom Chicken Soup

Ingredients

2 900 ml containers of Campbell’s Ready to Use Organic Free Range Chicken Broth (we like it because it is has less sodium than the regular)
2 boneless, skinless chicken breast
1 carrot, thinly sliced
1 stalk celery, finely chopped
1 cup fine egg noodles
Salt
Pepper
Chopped fresh parsley to taste (depending on the ‘green aversion level’ in your family)


Method

  1. In a large pot, heat broth to boiling; reduce heat to medium and add chicken breasts. Simmer 10 minutes until cooked through. Remove chicken and set aside.
  2. Add carrots and celery. Cover and cook 10 to 15 minutes or until carrots are tender. Add noodles and simmer until cooked (about 5 minutes).
  3. When cool enough to handle, shred or chop chicken into bite-size pieces. Reduce heat to low; add back chicken, and parsley, salt and pepper to taste. Heat and serve.
