Rotisserie Chicken Pitas with Avocado Tzatziki

Winter sandwiches need warmth and bulk, and this pita offers both in spades. Traditional tzatziki gets a boost of nutrients with the addition of avocado, and the onion offers a touch of freshness and crunch to this family-friendly dinner. Serve with a simple salad or small bowl of soup to complete the meal, and pack up any leftovers for lunch the next day.

Prep and Cook

  • To make the avocado tzatziki, combine all of the ingredients in a medium bowl and mix well. Chill until ready to serve.
  • To make the pitas, preheat the oven to 350°F. Brush each pita with some of the olive oil, stack together, and wrap tightly in aluminum foil; bake for 10 minutes or until the pitas are warm and soft.
  • Spread some of the tzatziki over the bottom half of each pita and top with 1 cup of shredded chicken. Garnish with red onion and cherry tomatoes and serve immediately.
