Kale or Spinach
Kale makes for a low calorie, zero fat, high fibre salad. So that’s where we’ll start. Pile in the kale. It’s high in iron, which will help transport oxygen to different parts of the body and increase liver function. It’s high in vitamin K to stave of cancers and keep your bones healthy. Kale is anti-inflammatory, high in calcium, vitamin C, and vitamin A. That means it’s good for you skin, eyes, and metabolism, too.
Quinoa
Quinoa (pronounced KEEN-wah) has seen a rapid increase in popularity over recent years as people discover that this versatile ingredient not only has a lovely delicate and nutty taste, but is a powerful superfood too. A complete protein, it is high in fiber and an excellent source of iron and magnesium. Quite simply, it is one of the healthiest pantry staples available and one of my favourite grains (although, technically it is a seed). Add 1/2 cup cooked quinoa to any salad for a superfood salad bowl boost.
Broccoli
Broccoli is a powerful anti-carcinogen, which is necessary to rid the body of toxins and prevent all types of cancer. It boosts liver function and can improve the immune system. It helps reduce cholesterol and is a powerful anti-inflammatory. It’s also a fantastic antioxidant, which has been known to help people lose weight while improving their heart and bone health. Add a couple of heads.
Beets
Cut up one whole beet and add that in. The main benefit of beets is that they lower your blood pressure, improving blood flow throughout the body, while fighting inflammation. They also boost your stamina, which will give you energy to get through day and then some. Beets also provide valuable daily nutrients like vitamin B, vitamin C and potassium.
Carrot
Thinly slice a carrot or shred into mix it into the salad. Carrots are a fantastic source of fiber, which helps with a wide range of bodily functions. They’ve been known to improve vision, create clearer skin, prevent heart disease and cleanse the body of toxins. They’ve also been known to keep your gums and teeth healthy. It’s also a powerful antiseptic, so really the saying should go, “A carrot a day keeps the doctor away.”
Blueberries
Mix in a small handful of blueberries. Blueberries are an incredible anti-oxidant helping with regularity. They also neutralize free radicals, which can cause aging, cell deterioration and disease. Blueberries will help with weight loss and reduce the amount of urinary tract infections. They also contain vitamins to promote brain health and reduce memory loss.
Pumpkin Seeds
Toss in a quarter cup of pumpkin seeds. They are high in zinc, which is important for cell growth, quality sleep, a stable mood, and insulin regulation. Zinc can also boost prostate health and is good for people with diabetes. Pumpkin seeds are high in good cholesterol, a vital ingredient for reducing the symptoms of menopause.
Basil
Add some basil, it’s known as one of the healthiest foods and is also delicious. It reduces inflammation and swelling, is chocked full of antioxidants and has almost every vitamin in the alphabet. Plus, basil has incredible anti-aging properties, which will not only keep you looking younger, but your organs will stay young too.
Lime Juice
Cover your salad so far in a light sprinkling of lime juice. The scent of lime juice causes your body to salivate which greatly improves digestion and helps with constipation. Lime juice rejuvenates the skin and hair, removing toxins. It also regulates the body’s absorption of sugar, which can help people with diabetes. It’s been known to boost weight loss, and help with respiratory, heart, and arthritis issues.
