#CelebratingSoup: Parsnip and White Bean

I love parsnips.  I think that they are such an underrated vegetable in fact, each time I’m buying them in the grocery store I have at least one person ask me what they are? Isn’t it odd how this once oft-used root has now been relegated to uncommon
