As an event planner, I’m often asked what kind of foods to make in advance for easy serving at parties. If you’re hosting a morning breakfast, picnic at the park, brunch, lunch, dinner or cocktail party, Spanish frittatas are an easy make-ahead food for any home cook.
I like to make my frittatas the night before I’m going to serve them. This saves me time (and a mess) when I’m cooking for guests. Bake the frittata in a dish and allow to cool, then place it in the fridge overnight. The following day it just needs to be reheated and then it’s ready to serve.

For breakfast or brunch I would serve frittata squares warm, straight from the oven. For lunch or a picnic, I might bake them in muffin liners and pack them for a room temperature meal.

For dinner, I would make a large round frittata cooked in a cast iron skillet and serve it family style with roasted asparagus, green salad, fresh baguette and Brie. Lastly, I would also consider these frittatas for hors d’oeuvres. Bake the egg mixture in a well-greased loaf pan and cut the baked omelette into 2″ thick squares. Thread a cherry tomato onto a bamboo skewer followed by a piece of the egg. Serve the items grazing-style on a platter or passed around on a pretty tray.

Spanish Frittata Squares

You’ll Need

  • 1 large baking potato, cooked and cut into small pieces
  • ½ large onion, minced
  • 8 eggs, whisked
  • ¼ cup milk
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper
  • ¼ cup Parmesan cheese or feta

Prep and Cook

  1. Preheat oven to 400°F.
  2. Place the chopped potato and onion in a mixing bowl and add the whisked eggs, milk, salt and pepper. Stir to combine.
  3. Pour into greased 9” x 13” baking pan and bake for 15 to 20 minutes or until the frittata is puffed and golden.
  4. Remove from the oven, sprinkle with cheese and allow to cool for 5 minutes.
  5. Cut the frittata into squares and serve hot or at room temperature.
