We’re transporting ourselves back to our childhood with our latest recipe: Soft boiled eggs with toast soldiers!

Whether you’re looking for a quick and light dinner for you and your partner, or just searching for something your kids will have a blast eating, this dish is for you. The perfect combo between a poached egg and a hard-boiled egg, the soft centres in these eggs are perfect for dipping. But don’t fret, if you (or your kids) prefer a harder boiled egg, just add 2 to 4 minutes to our cooking time. Either way, this quick and easy dish will keep everyone happy.

Soft-Boiled Eggs & Toast Soldiers Recipe:

You’ll Need

  • 4 large free-range or organic eggs
  • 4 slices of grainy bread
  • 2 tbsp butter
  • Sea salt and freshly cracked black pepper, for sprinkling

Prep and Cook

  • Bring a large pot of salted water to a rapid bowl
    Using a slotted spoon, gently lower each egg into the water (dipping it in and out one or two times may help prevent the shell from cracking)
  • Cook eggs for 4 to 5 minutes for a soft boiled egg (adjust time depending on how you like your yolk)
  • While eggs are boiling, start to prepare your toast (try to time it so that they are both finished at the same time)
    When toast is ready, butter generously and cut into strips or 'toast soldiers'
  • When eggs are ready, use a slotted spoon to carefully transfer each to an egg cup
    Lightly tap the top of each egg with a teaspoon to crack it, then scoop the top 1cm off so you can see the yolk
    Sprinkle with salt and pepper as desired... then get dipping!
