I used to dread packing my kids lunches. Mostly because my girls just didn’t eat them. I was concerned that they weren’t getting the nutrients that they needed during a busy school day, and I was a little annoyed with how much food was being thrown out every week.

So I decided to have them pack their own lunches, and this is what happened.
