Lindsey Shaw, a very dear friend of mine and a caterer extraordinaire once said to me when I was just married, “If you want to make your husband a nice dinner, put a whole chicken in the oven instead of those tasteless breasts”. Well, she was right, and to this day I have always preferred a good bird over a single breast (and I’m sure most husbands would agree). And now that we’re not just cooking for our newly beloveds, but rather for the whole family, the whole chicken has not let me down yet. I cook two at a time so there is plenty left over for all the meals I can make from the delicious leftovers.
