There are no two ways about it. When we’re talking about mango salsa, freshly homemade will trump that jar of store-bought any day of the week. And, we can promise, that you’ll be surprised just how quick and easy this healthy appetizer is to make. Simply dice some ripe (but not too ripe) mango and throw in some finely diced shallot, freshly chopped cilantro, minced red chili or jalapeno (for a little kick) and LOTS of freshly squeezed lime juice. Then all you’ve got left to do is open a bag of crispy nacho chips and gobble it all up. But our favourite part of this recipe? This salsa is also super tasty when served with some grilled fish, seared scallops and even juicy pork tenderloin.
Serves 4 to 6
1 ripe mango, peeled, pitted and finely diced
½ small red onion or shallot, finely diced
¼ cup chopped cilantro
1 small red fingerling chili or jalapeno, seeded and minced
Juice of 1 to 2 limes
1 tbsp olive oil
Pinch of sea salt
Nacho chips for serving
- In a bowl, combine all ingredients. Taste and adjust seasoning. Place in the fridge until ready to serve. Amazing served with nacho chips.
