Veggie Sushi Surprise

My oldest son loves sushi and often requests it for lunch. My youngest son doesn’t feel quite the same way. I really think he would like it if he gave it a try, but there’s just something about the nori-wrapped rice and fish combination that’s incredibly offensive to him. He’s not even keen on California rolls, and despite my best efforts I have yet to offer him a sushi he likes. Until now.
One thing he does enjoy is a cucumber cup stuffed with tuna and egg salad, so I thought I would try it with rice as well. As it turns out, this is a sushi-style food he enjoys. It’s all the same ingredients used in traditional vegetarian sushi, just served up in a brand new way.
I suppose the lesson I’ve learned here is, if something doesn’t work the first time, try it again in a new way. You just might be surprised what your kids will eat for lunch when presented with a fresh idea.
Cucumber Sushi Surprise
You’ll Need
- 2 cups sticky rice, prepared as per package directions
- 4 sheets nori
- 1 cucumber, halved (one half cut into long strips and the other cut into 1” chunks)
- Soy sauce
Prep and Cook
For Cucumber Rolls
- Place the nori on the counter.
- Spread ½ cup of rice on top.
- Place cucumber sticks lengthwise on the middle of the rice.
- Roll up into a log and cut into bite-size pieces.
- Serve with soy sauce.
For Cucumber Cup Sushi
- Hollow out cucumber sections with a small spoon or melon baller.
- Fill the centre of the cucumber with sticky rice.
- Crumble one sheet of nori and sprinkle over the rice cups.
- Serve with soy sauce.
