Two Monkeys Butternut Squash and Apple soup

Makes approximately 10 cups

You’ll Need

  • 1 tbsp Canola or Vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 8 cups butternut squash, peeled and diced
  • 1.5 sweet potatoes (not yams), peeled and diced
  • 2 apples peeled, cored and diced
  • 4 cups chicken or vegetable stock
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 cup milk

Preparation

  1. Heat oil over medium heat in a large pot. Add onions and garlic, gently cooking for 2–3 minutes or until soft.
  2. Add squash, sweet potato and apples and combine in pot. Add the next five ingredients and bring to a boil. Reduce heat, cover and simmer for 30 minutes or until squash is tender.
  3. Blend soup to create a puree. Return soup to pot and heat on low for 5 minutes to warm. Stir in milk. Be sure to taste and season if necessary.
