Easter Bunny and Chocolate Nest Cupcakes

A great hack for these Easter cupcakes is to buy store-bought ones and make this simply a decorating exercise. And of course if you’re an ambitious kind of bunny, making the cupcakes from scratch will definitely earn you some Brownie points.

You’ll Need
- 12 cupcakes
- 1 cup vanilla icing
- Green sanding sugar
- Candy bunnies
- ½ cup coconut
- 1 cup chocolate icing
- ½ cup mini eggs
- Large piping bag
- Large star tip
Prep and Cook
- Place the star tip inside the piping bag and fill it with the vanilla icing
Pipe the icing counter-clockwise around the cupcake, starting and finishing in the centre - Sprinkle the green sanding sugar over the top and insert a candy bunny into the middle of the cupcake
- Place the coconut in a skillet set over medium heat and cook, stirring frequently, until the coconut is mostly golden brown
Remove the pan from the heat and allow the coconut to cool completely - Place the star tip inside the piping bag and fill it with the chocolate icing
Pipe the icing counter-clockwise around the cupcake, starting and finishing in the centre - Scatter the toasted coconut over the tops of the cupcakes and press 3 mini eggs into the middle of each
