Makes filling for 6-8 sandwiches

You’ll Need

  • ¼ cup mayonnaise
  • 3 Tbsp honey
  • 1 ½ Tbsp prepared mustard
  • 3 cups shredded cooked chicken
  • ½ cup finely chopped celery
  • ¼ cup sunflower seeds
  • ½ cup diced apple
  • 1 piece Bibb lettuce
  • 2 pieces raisin bread

Prep and Cook

  • Whisk together the mayonnaise, honey and mustard in a small bowl and set aside.
  • Place the chicken, celery, sunflower seeds and apples in a medium bowl. Drizzle the mayonnaise mixture over top and mix well.
  • To make sandwiches, spread 1/2 cup chicken salad on a slice of bread, top with a piece of Bibb lettuce, cover with second piece of bread, slice and serve.
  • Sandwich filling will keep in the fridge for three days.
  • Feel free to use store-bought rotisserie chicken in this recipe.
