Crunchy Tortilla Chicken Wings

Serves 6 to 8

You’€™ll Need

  • 3 lbs chicken wings, split, wing-tip removed
  • 2 cups buttermilk
  • 1 large white onion, sliced
  • ¼ cup fresh lemon juice
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper

Tortilla Coating

  • 8 cups tortilla chips
  • 1 cup flour
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp freshly ground black pepper
  • ¼ tsp kosher salt
  • ¼ tsp cayenne pepper
  • 4 Tbsp melted butter, divided

Spicy Wing Sauce

  • ½ cup Louisiana-style hot sauce (we like Frank’€™s)
  • ¼ cup butter
  • 2 Tbsp honey
  • ¼ tsp kosher salt

How to Make

  1. Place chicken wings in a large resealable plastic bag. In a large bowl, combine buttermilk, onions, lemon juice, cumin, oregano, cayenne, salt and pepper. Stir well to combine and pour over chicken wings. Let marinate in the refrigerator 6 hours to overnight.
  2. For the coating, in a food processor, finely grind tortilla chips. Place in a large bowl with flour, cumin, garlic powder, pepper, salt and cayenne. Toss to combine.
  3. Preheat oven to 425ºF. Line a baking sheet with aluminum foil and place a cooling rack on top of the baking sheet for the wings to cook on.
  4. Remove wings from buttermilk mixture, gently shaking off excess marinade.
  5. Dredge wings in tortilla chip mixture and make sure wings are coated all over. Place on prepared rack. Drizzle with 2 Tbsp melted butter and bake 20 minutes. Turn wings over, drizzle with remaining 2 Tbsp melted butter and cook 20 minutes more, until browned and cooked through.
  6. For the wing sauce, in a medium saucepan, bring hot sauce, butter, honey and salt to a boil over medium heat. Turn heat to low and simmer 10 minutes.
  7. Serve with tortilla wings.
