You’ll Need
- 2 eggs, lightly beaten
- 1 14oz can pumpkin puree
- ¾ cup brown sugar
- ¾ cup apple sauce
- 1 tsp vanilla
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground ginger
- ½ tsp cinnamon
- ½ tsp nutmeg
- 1 ½ cups fresh or frozen cranberries
- ½ cup chopped walnut pieces (optional)
Prep and Cook
- Preheat oven to 350 degrees.
- Lightly grease 9" x 5" loaf pan.
- Whisk together eggs, pumpkin, brown sugar, apple sauce and vanilla in a large mixing bowl.
- In a second bowl, mix together dry ingredients and make a well in the centre.
- Pour the wet ingredients into the dry ingredients and fold in cranberries and walnuts.
- Pour into prepared loaf pan and bake for approximately 1 hour or until toothpick comes out clean.
- Cool before serving.
- Serve with a bowl of soup.
