Crunchy Chicken Salad on Raisin Bread

Makes filling for 6-8 sandwiches
You’ll Need
- ¼ cup mayonnaise
- 3 Tbsp honey
- 1 ½ Tbsp prepared mustard
- 3 cups shredded cooked chicken
- ½ cup finely chopped celery
- ¼ cup sunflower seeds
- ½ cup diced apple
- 1 piece Bibb lettuce
- 2 pieces raisin bread
Prep and Cook
- Whisk together the mayonnaise, honey and mustard in a small bowl and set aside.
- Place the chicken, celery, sunflower seeds and apples in a medium bowl. Drizzle the mayonnaise mixture over top and mix well.
- To make sandwiches, spread 1/2 cup chicken salad on a slice of bread, top with a piece of Bibb lettuce, cover with second piece of bread, slice and serve.
- Sandwich filling will keep in the fridge for three days.
- Feel free to use store-bought rotisserie chicken in this recipe.
