Ginger Cranberry Granola

Sometimes the best hostess gifts are edible ones (especially if you are gifting a foodie). This delicious and easy recipe for Ginger Cranberry Granola is perfect packed in a jar and tied with a festive bow for an easy holiday gift this season! It’s also perfect with plain yogurt for an everyday breakfast with a seasonal twist. Or enjoyed as an afternoon snack.

Ginger Cranberry Granola Recipe:
You’ll Need
- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1 cup chopped almonds
- 1 tsp cinnamon
- ½ tsp ground ginger
- 1/8 tsp salt
- ¼ coconut oil
- 1/3 cup brown rice syrup
- 1 tsp vanilla extract
- 1 cup dried cranberries
- 1 orange, zest only
- * optional ¼ - ½ cup crystalized ginger, finely chopped
Prep and Cook
- Preheat oven to 350F
Line a baking sheet with silpat or parchment paper - In a large mixing bowl combine oats, coconut, nuts, and salt as well as ground cinnamon, ground ginger, and orange zest
- In an a small mixing bowl combine oil, sweetener, and vanilla
Add to oat mixture and stir to evenly combine - Spread mixture into a single layer on baking sheet and bake for 15 minutes
Remove from oven and toss
Place baking sheet back in the oven for 5 minutes
Toss again
If mixture looks golden and smells fragrant remove from oven
If not, place back for an additional 5 minutes - Allow to cool completely
Break into pieces and return to a mixing bowl
Stir in the dried cranberries and crystalized ginger (if using)
Store in an air tight container
