Mini tacos make for an excellent and healthy finger-food option. We say ‘Ole’!
- Optional toppings: cheddar cheese, green onions, tomatoes, peppers, salsa, and sour cream
Prep and Cook
- 1Set a skillet over medium-high heat and cook the meat until it is slightly browned. Add the cumin, chili powder, salt, tomato paste and water and stir to combine. Continue cooking until the meat is cooked through and the sauce has thickened, about 10 to 12 minutes.
- 2Place a small amount of the meat mixture into each of the scoop-style tortilla chips. Add assorted toppings as desired and place the tiny tacos on a large serving platter.
- 3These can be served hot or at room temperature.
