Roasted Salmon with Fresh Cucumber Salsa

This recipe takes the heat off of you when it comes to entertaining. Roast or grill your salmon in advance of your guest’s arrival, and serve it with the accompanying honey and lime-infused cucumber salsa. The kids may even try the salsa if it’s made with cucumbers they grew themselves. This roasted salmon with fresh cucumber salsa is a delicious and fresh summer meal or perfect for those evenings when the warm weather should be here already, darn it.

Roasted Salmon with Fresh Cucumber Salsa Recipe:
You’ll Need
- 1 cucumber, diced
- ÂĽ cup red onion, minced
- ½ jalapeno, seeded and minced
- ½ tsp salt
- 2 Tbsp olive oil
- Juice of 1 lime, approximately 2 Tbsp
- 1 Tbsp honey
- 1 side of salmon
- 1 tsp dill weed
- ½ tsp salt
- ½ tsp garlic powder
- 1 Tbsp olive oil
Prep and Cook
- Combine cucumber, red onion, jalapeno, salt, olive oil, lime juice, and honey in a small mixing bowl and stir well
Cover and refrigerate for at least 1 hour - Preheat oven to 425 degrees F
Wash salmon with cold water, pat dry, and place skin side down on parchment-lined baking sheet - In a small bowl, whisk together dill weed, salt, garlic powder, and olive oil. Pour seasoning over salmon and rub in, coating salmon evenly
- Bake for 10–12 minutes or until salmon flakes easily with a fork
- Serve warm or at room temperature with a scoop of cucumber salsa
