But, we’re the first to admit that we can get into an ‘egg on toast’ rut which is quite simply unacceptable when there are so many other options available to us. So, from soft boiled eggs with toast soldiers, to the best cobb salad, we’re sharing 7 creative ways to turn your hard or soft boiled eggs into dinner this week.

7 Ways to Use Hard-Boiled Eggs

1. Toss them into a healthy Cobb Salad:

Hard-boiled eggs, along with chicken and bacon, are classic additions to any cobb salad.

2. Make a kid-fave: Soft Boiled Eggs with Soldiers

We’re transporting ourselves back to our childhood with our latest recipe: Soft boiled eggs with toast soldiers! Whether you’re looking for a quick & light dinner for you and your partner, or just searching for something your kids will have a blast eating, this dish is for you.

3. Add them to a potato salad:

Hard boiled eggs are classic additions to a creamy potato salad. But we prefer a lightened up version. Boil or roast small potatoes (we like mini Yukon gold potatoes, sliced in half but keeping the skins on) and then let cool. Transfer to a large bowl and toss in chopped hard boiled eggs, sliced radishes and fresh baby arugula (or any other mesculn green you like.) In a small bowl whisk together the juice of 2 lemons with 1 tsp Dijon mustard, 1/4 cup olive oil, sea salt and freshly cracked black pepper. Drizzle over salad and toss gently to coat ingredients. Serve immediately.

6. Make Devilled Eggs

Sure, deviled eggs may seem a bit dated. But really, what could be better? Hard boil 8 eggs, then drain and let cool. Peel and slice in half lengthwise. Using a small spoon, carefully remove the yolk, while leaving the white intact. Transfer yolks to a bowl and mash gently. Stir in 1/2 cup mayonnaise, 1 tbsp Dijon, 1 tsp white wine or champagne vinegar, salt and pepper. Mash with a fork until very smooth. Mound yolk mixture back into the white. Sprinkle with smoked paprika and garnish with dill or chives.

7. Spinach & Arugula Salad with Tomato & Egg

For a super easy and super healthy weeknight dinner, toss together a mix of baby spinach and baby arugula in a large bowl. Toss in any veggies you like (we chose sliced vine tomatoes) and a few halved hard-boiled eggs. In a small bowl whisk together the juice of 1 lemon with 1 tsp Dijon, 1/4 cup olive oil and pinces of sea salt. Drizzle over salad and toss gently. Serve salad on it’s own or pair with some roasted fish or chicken for a more substantial meal.
