SavvyMom Chicken Soup

Ingredients
2 900 ml containers of Campbell’s Ready to Use Organic Free Range Chicken Broth (we like it because it is has less sodium than the regular)
2 boneless, skinless chicken breast
1 carrot, thinly sliced
1 stalk celery, finely chopped
1 cup fine egg noodles
Salt
Pepper
Chopped fresh parsley to taste (depending on the ‘green aversion level’ in your family)
Method
- In a large pot, heat broth to boiling; reduce heat to medium and add chicken breasts. Simmer 10 minutes until cooked through. Remove chicken and set aside.
- Add carrots and celery. Cover and cook 10 to 15 minutes or until carrots are tender. Add noodles and simmer until cooked (about 5 minutes).
- When cool enough to handle, shred or chop chicken into bite-size pieces. Reduce heat to low; add back chicken, and parsley, salt and pepper to taste. Heat and serve.
