Yogurt Covered Raisins and Almonds

Yogurt Covered Raisins and Almonds Recipe - SavvyMom

Are you interested in making homemade versions of your favourite childhood treats? Well, “treat” is what I was led to believe yogurt covered raisins were when I was younger — and they are just as good as any store-bought version.

I gave this recipe from Real Snacks by Lara Ferroni — a compilation of your favourite childhood treats to make at home with your own ingredients — and it was a huge success. The yogurt coating comes together quickly, without the use of any small appliances, and it would be fun to test out all manners of dippable foods, like other fresh and dried fruits, nuts, seeds, potato chips, etc.

These would make super yummy edible gifts or are great for a yummy snack for any occasion.

Yogurt Covered Raisins and Almonds Recipe:

You’ll Need

  • 1 tsp hot water
  • ½ tsp gelatin
  • ¼ cup Greek yogurt
  • 1½–1¾ cups powdered sugar
  • 1 tsp honey
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 cups dried fruit (like raisins and cranberries) and/or nuts

Prep and Cook

  • Line a baking sheet with parchment paper and set aside
  • In a small bowl combine the hot water and gelatin, and stir until the gelatin dissolves. Set aside
In a slightly larger bowl, whisk together the yogurt, powdered sugar, honey, salt, and vanilla extract until smooth and thick.
Add the gelatin mixture and stir to combine.
  • Place the raisins in a medium bowl and add half the yogurt coating
Toss to lightly coat the fruit with the mixture and pour everything out onto the prepared baking sheet
  • Using a fork, separate the raisins as much as you like, making small clusters of fruit
Place the tray in the fridge for 15–20 minutes, or until the coating is mostly set
  • Transfer the raisins back into a mixing bowl and toss with the remaining yogurt coating to give them a second, thicker coat
Drop them back onto the lined baking sheet
When the tops are dry to the touch, move the raisins around to make sure the undersides also have a chance to dry. (If you have a cooling rack with a small enough grating, you can scatter the raisins on top for quicker and more even drying.) In total, they will take at least 6 hours or overnight to dry.
  • Store yogurt-covered raisins in an airtight container at room temperature
They will keep for several weeks.

These yogurt covered almonds did not turn out well. I followed the recipe… my yogurt mix was thin, so it didn’t cover the almonds. It seems like 1/4 cup of yogurt isn’t enough.
