When my husband and I both worked outside of the home, with an almost-two hour commute each way accompanied by two cranky toddlers, this was the meal that saved our weeknight dinners.
It doesn’t sound like much, but when you walk in the door after a l-o-n-g day and know that a homemade dinner can easily make it on the table, it quickly becomes a go-to meal for the family.

Crock-Pot

The process is simple. Before you head out the door in the morning, wrap potatoes in aluminum foil and pop them into a slow cooker. Leave them for the day and when you come home they will be perfectly baked and ready for eating. Top them with an assortment of steamed veggies, leftover proteins, cheese and sour cream and serve alongside a side salad.

Also, I should note that this was a sanity saver when it came to feeding my picky eater. We all customized our toppings based on personal preferences and as long as at least one vegetable was on the potato, I didn’t worry about what else made the cut. Eight years later, it’s still a popular dinner around my house, and the method of cooking the baked potatoes works great when I’m entertaining, even if I don’t plan on setting up a DIY bar.
