Checkerboard Sandwiches

Makes one 9″ x 9″ checkerboard sandwich (25 pieces)

You’ll Need

  • 9 slices whole-wheat sandwich bread
  • 7 slices white sandwich bread
  • Assorted fillings (i.e. peanut butter and jam, ham and cheese)
  • Square tray or platter

Prep and Cook

  • Place 4 slices of the whole-wheat bread and 3 slices of the white bread on a work surface. Cover each slice of bread with one of your sandwich fillings and top with a second piece of bread (the same type). Set aside the remaining two pieces of bread for later.
  • Remove the crusts from one of the sandwiches (using a serrated knife), cutting the inside to a 3.5” x 3.5” square. Cut the piece in half lengthwise, then in half widthwise giving you four even squares. Repeat with the remaining sandwiches.
  • Place the sandwiches in a row, alternating between the types of bread in order to create a checkerboard effect. You will have enough sandwiches for five rows across and five rows down.
  • Using a ½” round cookie cutter, or apple corer, cut circles from the remaining slices of bread to use as the checkers. Place the white bread pieces on the brown bread squares, and vice versa.
  • Top with “King Me” signs and serve.
