Pumpkin Chia Pudding

You’ll Need
- 1 cup unsweetened almond milk
- 2 Tbsp chia seeds
- ½ cup pumpkin puree
- 1-2 Tbsp pure maple syrup
- ½ tsp pumpkin pie spice
- crushed gingerbread cookies or chopped nuts (optional)
Prep and Cook
- Whisk together all of the ingredients in a small mixing bowl. Cover with plastic wrap and store in the fridge.
- After 1 hour, remove the plastic wrap and stir well. Cover, return to the fridge and chill for 8 hours or overnight.
- Serve topped with crushed gingersnap cookies or nuts, if desired.
