Pumpkin Chia Pudding

You’ll Need

  • 1 cup unsweetened almond milk
  • 2 Tbsp chia seeds
  • ½ cup pumpkin puree
  • 1-2 Tbsp pure maple syrup
  • ½ tsp pumpkin pie spice
  • crushed gingerbread cookies or chopped nuts (optional)

Prep and Cook

  • 1
    Whisk together all of the ingredients in a small mixing bowl. Cover with plastic wrap and store in the fridge.

    After 1 hour, remove the plastic wrap and stir well. Cover, return to the fridge and chill for 8 hours or overnight.
  • 3
    Serve topped with crushed gingersnap cookies or nuts, if desired.
