Slow Cooker Chicken and Broccoli

Despite the name, slow cookers save tons of time. What’s better than coming home from a long day at work to a fully cooked meal that was prepped and cooked in a fraction of the time it might normally take? This slow cooker chicken and broccoli is so yummy and comforting it’ll seem like a private chef whipped it up and dropped it off for you. A girl can dream, no?

Serves 4 to 6
Slow Cooker Chicken and Broccoli Recipe:
You’ll Need
- 1 ½ cups long grain white rice, cooked
- 4 skinless, boneless chicken breasts, halved
- 2 cups shredded Cheddar cheese
- 2 cups broccoli
- 2 ½ cups carrots, peeled and thinly sliced
- 1 ½ cups mushrooms, sliced
- 2 cups condensed cream
- 1 ½ cups chicken broth
- Salt & pepper to taste
Prep and Cook
- Spray slow cooker with vegetable cooking spray, and add rice
- Layer chicken, 1 cup of cheese, broccoli, carrots, cream, and remaining cheese on top
- Pour chicken broth around the edges and do not stir
- Cover and cook on low for six hours, or until chicken is cooked through
Stir rice and vegetables before serving
