Despite the name, slow cookers save tons of time. What’s better than coming home from a long day at work to a fully cooked meal that was prepped and cooked in a fraction of the time it might normally take? This slow cooker chicken and broccoli is so yummy and comforting it’ll seem like a private chef whipped it up and dropped it off for you. A girl can dream, no?

Serves 4 to 6

Slow Cooker Chicken and Broccoli Recipe:

You’ll Need

  • 1 ½ cups long grain white rice, cooked
  • 4 skinless, boneless chicken breasts, halved
  • 2 cups shredded Cheddar cheese
  • 2 cups broccoli
  • 2 ½ cups carrots, peeled and thinly sliced
  • 1 ½ cups mushrooms, sliced
  • 2 cups condensed cream
  • 1 ½ cups chicken broth
  • Salt & pepper to taste

Prep and Cook

  • Spray slow cooker with vegetable cooking spray, and add rice
  • Layer chicken, 1 cup of cheese, broccoli, carrots, cream, and remaining cheese on top
  • Pour chicken broth around the edges and do not stir
  • Cover and cook on low for six hours, or until chicken is cooked through
    Stir rice and vegetables before serving
