Two Monkeys Butternut Squash and Apple soup

Makes approximately 10 cups
You’ll Need
- 1 tbsp Canola or Vegetable oil
- 1 onion, chopped
- 1 clove garlic, chopped
- 8 cups butternut squash, peeled and diced
- 1.5 sweet potatoes (not yams), peeled and diced
- 2 apples peeled, cored and diced
- 4 cups chicken or vegetable stock
- 1 tbsp fresh thyme, chopped (or 1 tsp dried)
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
- 1 tsp salt
- ¼ tsp pepper
- 1 cup milk
Preparation
- Heat oil over medium heat in a large pot. Add onions and garlic, gently cooking for 2–3 minutes or until soft.
- Add squash, sweet potato and apples and combine in pot. Add the next five ingredients and bring to a boil. Reduce heat, cover and simmer for 30 minutes or until squash is tender.
- Blend soup to create a puree. Return soup to pot and heat on low for 5 minutes to warm. Stir in milk. Be sure to taste and season if necessary.
