You’ll Need
- ½ cup unsalted butter
- ¾ cup + 2 Tbsp all-purpose flour
- 1 tsp baking powder
- 3 eggs
- ¼ cup granulated sugar
- 2 Tbsp honey
- Zest of 1 lemon
Prep and Cook
- 1In a small saucepan set over medium heat, melt the butter until it’s lightly browned. Remove it from the stove top and allow it to cool.
- 2Sift the flour and baking powder into a small mixing bowl. Set aside.
- 3In the bowl of an electric mixer fitted with the whisk attachment, beat the eggs until light and fluffy—about two minutes. Add the sugar and honey and beat until thick—about five minutes.
- 4Reduce the speed to low and add the flour mixture and lemon zest. Only whisk until the flour is just combined.
- 5Remove the bowl from the mixer and add the butter. Fold it in with a spatula until well incorporated. Cover the bowl with plastic wrap and chill for one hour.
- 6Preheat the oven to 350°F. Melt a tablespoon or so of butter, and brush the insides of the mold thoroughly. Fill each of the prepared molds ¾ full of the batter and bake until golden brown—10 to 12 minutes.
- 7Remove from the pan and let cool on a wire rack. Repeat with more butter and the remaining batter.
- 8Best served the day they are made.
