Quinoa Salad with Yellow Squash, Avocado & Chia
Bursting with healthy ingredients, this quinoa salad packs a superfood punch.
It’s hearty enough to serve as a main meal, but we also love it with grilled shrimp.
- 1 cup cooked quinoa
- 1 avocado, sliced
- 1 yellow squash, peeled into ribbons
- 2 cups fresh pea shoots or baby greens
- juice of 1 lemon
- 1/4 cup olive oil
- 1 tbsp chia seeds
Prep and Cook
- In a large salad bowl, combine quinoa, avocado, squash, and pea shoots.
- In a small bowl whisk together lemon juice, olive oil, and sea salt until emulsified.
Drizzle over salad and toss gently to combine.
Divide between 4 salad bowls.
Sprinkle with chia seeds.
