Quinoa Salad with Yellow Squash, Avocado & Chia


Bursting with healthy ingredients, this quinoa salad packs a superfood punch.

It’s hearty enough to serve as a main meal, but we also love it with grilled shrimp.

Serves 4

You’ll Need

  • 1 cup cooked quinoa
  • 1 avocado, sliced
  • 1 yellow squash, peeled into ribbons
  • 2 cups fresh pea shoots or baby greens
  • juice of 1 lemon
  • 1/4 cup olive oil
  • 1 tbsp chia seeds

Prep and Cook

  • In a large salad bowl, combine quinoa, avocado, squash, and pea shoots.
  • In a small bowl whisk together lemon juice, olive oil, and sea salt until emulsified.
    Drizzle over salad and toss gently to combine.
    Divide between 4 salad bowls.
    Sprinkle with chia seeds.
    Serve immediately.
