If you’re anything like us, you’ve got a boat-load of turkey, ham, or lamb sitting in your fridge, and you’re looking for—preferably healthy—ways to use them up. Lucky for you we planned ahead and came up with three healthy recipes to use up those holiday leftovers.

All of them are flavour-packed, healthy, and bursting with veggies, so you can feel good about what you’re eating, even though you’re probably still sneaking those leftover treats, too.

1. Make a healthy veggie and grain salad with your leftover turkey

If you’re looking for a healthy way to use up your turkey leftovers, this salad is perfect. Simply toss a slection of mixed greens like baby kale, baby spinach, and arugula with sliced cherry tomatoes, cucumber halves, and any cooked grain (we like quinoa). Then add your leftover sliced turkey breast and drizzle it all with a flavour-packed lemon vinaigrette (juice of 2 lemons, 1/2 cup olive oil, and a sprinkle of sea salt and pepper). A perfect lunch or dinner.

2. Add your leftover diced ham to a frittata or omelette

Why are we so obsessed with frittatas? Well, there’s a few reasons. 1. You can pretty much use any ingredients you like, including leftover meats. 2. They are a cinch to make (and are made in one pan) and 3. They make for ah-mazing brunches, lunches, and dinners. Looking to lighten-up your frittata? Try making this healthy dish even healthier by loading it with veggies and replacing the whole eggs with a few egg whites. Then toss in your leftover baked ham or other meat from your holiday leftovers and you’ve got a flavour-packed healthy meal.

3. Make a healthy Greek-style wrap sandwich with your leftover sliced lamb

We must admit, we love a good wrap sandwich. Paired with a steaming bowl of soup, it makes a perfectly healthy lunch or dinner. But the best part about wraps is that they require very minimal effort and you do not need to follow any recipe. Simply, combine any healthy ingredients that you like, including your leftover sliced meat, and wrap them all up in a whole grain tortilla. This ones a cinch to make. Simply pile your leftover sliced lamb onto a flour tortilla along with some tangy tzatziki, fresh Boston lettuce, sliced cherry tomatoes, red onion, and crumbled feta. The roll it up tightly and you’re ready to roll. The best part? Make a couple of extra and your holiday leftovers have tomorrow’s packed lunch sorted too.
