Baked Pasta with Chicken and Ricotta


Chocolate Mud Pies

You’ll Need

  • 250 g (½ lb) kid-friendly spiral pasta (Scooby by Unico is our kids’ fave)
  • 1 cup cooked chicken, chopped
  • 1 cup chopped fresh or frozen spinach, thawed and drained (or the favourite vegetable of the month, such as carrots, peas, or broccoli)
  • 1 cup 2% milk
  • 1 cup ricotta cheese
  • Salt and pepper
  • ¼ cup parmesan, grated

Prep and Cook

  • Preheat oven to 400 degrees.
  • Cook pasta al dente (not fully cooked) in pot of boiling water.
  • Drain pasta and return to pot.
  • Add chicken, spinach, milk, and ricotta. Season with salt and pepper.
  • Pour noodles into baking dish and top with Parmesan cheese. Bake for 20–30 minutes or until golden brown.
