Baked Pasta with Chicken and Ricotta

Chocolate Mud Pies
You’ll Need
- 250 g (½ lb) kid-friendly spiral pasta (Scooby by Unico is our kids’ fave)
- 1 cup cooked chicken, chopped
- 1 cup chopped fresh or frozen spinach, thawed and drained (or the favourite vegetable of the month, such as carrots, peas, or broccoli)
- 1 cup 2% milk
- 1 cup ricotta cheese
- Salt and pepper
- ¼ cup parmesan, grated
Prep and Cook
- Preheat oven to 400 degrees.
- Cook pasta al dente (not fully cooked) in pot of boiling water.
- Drain pasta and return to pot.
- Add chicken, spinach, milk, and ricotta. Season with salt and pepper.
- Pour noodles into baking dish and top with Parmesan cheese. Bake for 20–30 minutes or until golden brown.
